All digital cameras have lag. It just depends on how much it's optimised by the camera.(Time between button press and shutter fire) this could be anything between a few milliseconds or 1 second. Please don't just jump for any camera, read some reviews from the site links I provided.

The Nikon and the Canon get good results in the innitial tests (below) and even though i've always used Nikon Cameras I find that a lot of the images Nikons produce do seem to need a little post processing to make them better. So, Out of the three cameras you mention i would have to go with the Canon personaly even if it was just for the extra 2x zoom. They are good, well made cameras that do an excellent job.

Have a read through the innitial tests just to make sure your getting what you want.
