Well, a decent 500w PSU would do.
Like this -

Or this would be better -

Thanks guys, I will look at getting another psu asap, I had a thought about it not being powerfull enough to begin with, but didnt take into consideration overclocking
Is that probably why my system turns itself off and then back on again after saving bios settings?

Most BIOSes do this after you make significant enough changes, in order to reset all the hardware.

The reason you may not be able to overclock could be the PSU, if it only has a 4-pin P4 connector, that can affect overclocks, and by increasing voltage you increse the amount of watts the system needs.
If you absolutely ahve to go cheap, go for the following manufacturers -
Coolermaster
Thermaltake
Antec
Corsair
PCP&C
OCZ

No-Name units are generally a bit dodgy.

And you do know that you are only using one 8600GTS on that board, as you need an SLi board to get the performance of 2 GPUs combined (ish)

Afraid not, its an intel chipset, which means it is only capable of crossfire. So only one of your 8600GTs will be being used by games.
