New VM server, what to play with?

So I just set up my home server as a VM server. I've got XP pro loaded, as well as Ubuntu, gOS, and now Fedora 10. What else should I play around with?

Arch, Slack, or Gentoo. Something more advanced than ubuntu and fedora.

You could install Server 2003 and run a Domain from your home XD. Once I get more ram I plan on running a full infrastructure. Just imagine: if you had a VPN you use your server from anywhere in the world!
