I had the same problem, but luckily there was an easy solution. First off i plugged in the HDMI from the 360 to the TV, and ensured the sound came out of the tv. Then i just connected some regular red/white RC cables from my Surround sound receiver, to the AUDIO OUT slot on my TV. This way everything in the AUDIO IN slots and the sound form my HDMI on my TV will go through the AUDIO OUT to the surround sound.
Then on your 360 dashboard, go to console settings and make sure the sound is set to Dolby Digital 5.1 Surround.

*edit- i also put the volume on the TV on mute all the time because sometimes the audio comes out both the TV and the surround sound.
This would really be the only solution or easiest solution from your current setup that you have picture.
I have mine setup up like this. I have a non hdmi 360 which is plugged into my tv using the component cables, and then have the composite rca cables(red & white) going from the audio out on the tv to the audio in ports on my stereo.Edited by K092084 - 12/17/08 at 2:29pm
