They wouldn't just save die space, they would save a lot of room around the memory chips as well since they would need about half the connections to the PCB.
That is so not true, you know that all those connectors on the PCB have to lead somewhere, right? The chip has to provide the facilities for 512-bit VRAM bus, and the memory bus width WILL impact the die size, quite significantly for that matter. The electrical pulses don't just magically jump from the traces on the PCB into their destination on the chip...
