It's just the code name for the GPU chip.
R700 = 2x800 Shader Processor GPU, dual RV770 chips on one card (used in the HD4870 X2 and HD4850 X2)
RV770 = 800 Shader Processor GPU (used in the HD4870 X2, HD4850 X2, HD4870, and HD4850)
RV770LE = 640 Shader Processor GPU, RV770 with 160 Shader Processors disabled (used in the HD4830)
RV740 = the first 40nm ATI chip (possibly a HD4830 replacement)
RV730 = 320 Shader Processor GPU (used in the HD4670 and HD4650)
