Well, if you want the absolute most powerful GPU setup that you can currently get, that title would be awarded to 3-way SLI with the GTX285 or 280.

1 295 will be fine and hold you off for a long time if if you get power hungry wait till the prices drop

GTX295 seems to be sold out everywhere. I am in the same position as you are for my i7 build, so if you can't find the 295 just get the 285 and save up for the next big release.
