I totally agree with hiiya777 and the other guys. Your build, although very awesome, is extremely overkill for a htpc. If I had to put it into a category, it would be mainstream gaming. To give you some ideas in the right direction here's some brief stuff to get you started, along with what hiiya777 has offered.
Any amd board with a 780g chipset will play 1080p blu ray easily, no video card required and even using a single core. It's not about cpu power anymore. If you wanted to do some "light" gaming maybe look into a 4670. Performance wise they're between a 3850 and a 3870 and in some games even better then a 3870. But the best part is that card is small and doesn't require extra power as the pci-e slot gives it enough juice. Newegg sells them for $56 openbox last time I checked.
For the cpu so long as you have the right video card or onboard chipset even a single core 1.8ghz 45w sempron can play 1080p and browse the web more then fine, I know it will I've built it, so you got my word on it. But if she's looking to do some light gaming then grab practically any dual core of your choice as any of today's will serve well enough.

idk, i would go for a 45nm quad, even the q8300 simply cause it will run cooler than the q6600. the case is good, but you will need a fan controller with some strong fans hooked up to it... you should have the fans running low when watching movies, and super loud working their a**es off cooling the computer when you are gaming... I think for 1920x1080, you should run a 4850 cause that uses higher grade stuff than ddr3 (sorry, too lazy to look up which ram it runs... i think ddr5, not sure tho). I do suggest however running games at 1280x720 cause it will still be high def, but lower res, so you could probably go with a 9600 GSO or GT, they would both be good if you decide to run the games at 720p (you will hardly notice a difference anyways)

So yea... since you are gaming on it, go with either a 45nm dual or quad... dont go crazy overclocking, cause you want an htpc to run cool and quite... vid cards should be 9600GT or GSO and run the games at 1280x720. if you are looking at an ATI video card, i think you should use 3870-4830...

Will I be able to use the onboard HDMI, but still use a graphics card via hybrid SLI?

Apparently the existing 8400GS is compatible with Hybrid SLI. Wouldn't that do?

I'd prefer to stick to my intel builds, know what I'm doing there. IS the Q8000 really that much cooler than the Q6600?

The options are endless when you say price isn't much of a problem. I say figure out what it is that she really wants out of this machine. Any gaming computer with a modern video card even a $20 3450 will play 1080p just fine. So it all comes down to what kind of games she will be playing and how much disk space is needed. It's all a balancing game to spend your money in the best way possible but it's hard to balance things when you don't know the details.

For reference World of Warcraft can easily play with max settings on the, low powered but efficent, previously mentioned 4670. But if she wants to play Fallout 3 at 1080p go get a $200 4870.

To me it seems like what kind of games she will play is going to determine what kind of a system you need.

WE'll be gaming at 1366(or 1360)x768.

What about a 9600GSO? They're basically an 8800GSO, right? Those performed damn near 8800GT's, right?

Games will be Overlord and Half Life.
