And if I am not mistaken, my memory needs to be in dual channel which as slots 1 & 2 which are the closest to the CPU.
I'd imagine that by mounting it this way with the mount, then you'd get more
clearance for your ram, rather than less.
As nafljhy said, if the fan does get in the way, then you can always place the rubber push mounts a bit higher. It won't get the highest airflow through, but it will work, another fan (or the original), sucking air through on the 'left' side, would also help.
All that said, what motherboard are you using? You should be able to get dual channel as long as you use two matched slots.

And also consider then dimensions, if you mount it dead centre, the 50mm deep xiggy, should protrude 25mm towards the ram. Add the fan, and you get another 25mm, give or take. So roughly 50mm protruding at the ram. Whereas the sideways mounted xiggy would protrude 60mm towards the ram as it is 120mm wide. So it should give you 10mm more space. A good idea would be to measure the distance from the centre of your socket, to the first dimm.
