Here is a thread that i would like to start, that will contain apps that all mac user should at least know about! Of course ima need some help from the mac users on here so crawl out and come help!

This of course was inspired from OrphanShadow's list in his Mac Desktop thread.

As the list grows ill organize it into categories and sort by free and licensed.

Menumeters is dated. iStat Menus is teh new hotness.

Obviously Adium is the best chat client on *any* platform.

I have a love affair with Safari 4.

Not Mac exclusive, but Mandolux has beautiful wallpapers.

Spotlight is great, but I still use and swear by Quicksilver.

I'm sure that I can think of some more later.

Quicksilver is a must.

Adium for IM.

Page Capture is a cool widget that takes a full screenshot of entire webpages (if you put in the URL of the URL you see above, you would get a 100% size picture of the page, or 50% or 25% or whatever you choose).

iStat is an essential widget for anyone that knows something about computers.

Monolingual for removing those waste-of-space language packs and additional architectures (should be used every time a new app is added, because new apps will have those packages again).

Quinn = Tetris. Get it.

The Unarchiver for .rar and other "strange" compressed files.

VirtualBox for obvious reasons.

Carbon Copy Cloner for backups (takes a bit longer, but beats Time Machine in whole system backups, IMO; Time Machine excels as an old file archive).

Open Terminal so that you can just click a button in the Tool Bar of your Finder window to open a Terminal in your present working directory (or right-click > Other > Open Terminal to open the GUI folder in a Terminal directory).

Audio Hijack Pro for recording audio directly from applications (beats anything I've used in windows; I used to use some recording software that came with my sound card). It is a demo, but you get 10 minutes before they overlay fuzz. 10 minutes is good enough; you can just reset it after that and get another 10 min.

Crossover/Crossover Games (albeit not essential). I have it if anyone wants it.

And if you like old school Doom, get the Doomsday Engine. You have to have your own .WADs, though.
