Think it will be a mostly a live environment with a installer possibly added at a later date, 3.2gb should be fine

You guys might want to check out Godane’s Development Blog, maybe get in touch with him and have him help out if you guys run into any snags. He's working on Archiso-live, basically an Arch LiveCD with XFCE, and he's getting there.

That's generally how a live cd works...

..not. Although some have the option to do so. Usually it's some small distros that allow copying everything to RAM and then proceeding with booting to the OS. Most Live CDs (I could be wrong here of course) copy files to RAM on the fly as you request them.

Windows-like interface?
I heard chinese/Japanese people have made an UNIX OS that looks like windows XP. I think if you do it WITH windows Vista/7 interface, you will having a lot of reporters coming at you and you might become famous for doing that.
