I use SpeedFan myself, but I renamed the temps right off the bat so I wouldn't be confused. The 3 temps (besides Tcore) Speedfan reports for this mb are (in no particular order) Tcase, Tsystem, and Tpower. Tsystem is most likely a north bridge sensor. Tpower is most likely a mosfet sensor for the cpu power supply (not to be confused with the system
power supply). I say "most likely" because Gigabyte hasn't officially reported where the sensors are, AFAIK.
To ascertain which is which, enable Speedfan's temp monitoring graph. Enable each of the temps, then start a torture test app like OCCT or Prime95. Tcore will shoot up first, closely followed by Tcase. Tpower will lag Tcase, and Tsystem will be lowest of all.
If your temps at idle aren't too close together, another way to check is to write down your minimum temps at idle, boot into the BIOS, and match with what the BIOS reports for cpu and system on the PC Health page.
When you're confident which is which, rename the Speedfan labels.
