Will adding memory affect my OC?

The guy buying my computer wants to put in 2 more gigabytes of RAM. Will my 144 still run at 2.7?

The processor will, but getting the RAM to do the same overclock might be a little more difficult.

They are DDR500, I have them at stock timings at 245 MHz.

You might have to run 2T command timings, since having all 4 RAM slots full stresses the memory controller. Who knows, though...you might be able to run it at full speed. When you get everything set up, I would test for stability with Prime95 or Memtest.
