Where should i put my thermometer?? between the processor and the heat sync or just lay it on the mobo.?

You are talking about one of the temp probes right? Like an aerogate?

it came with the case ... and is a wire coming out of the front on the inside... its like a copper wire with plastic over it and take it off and put it somewhere and it reads the temp?? sorry for my lack of knowledge.

I'd keep it on the CPU then. Just find a way for it to stay on the heatsink so it'll pull the temp right off of it.
