Thanks for the guide. I have read through it and there is no mention of being able to only OC the CPU or the Memory. Should I be able to overclock both at the same time? I have seen people with this problem before and I can't seem to find a solution. I would like to get my Memory running at about its rated 250Mhz (PC4000) as well as keeping my 2.8Ghz OC on the CPU.

Both always OC at the same time.
To OC the CPU set a high RAM divider so the RAM wont inhibit the CPU OCing effort.
To OC the RAM, reduce the CPU's multiplyer to 7x so as you increase the HTT to test for the RAM's max stable speed the CPU wont effect the outcome.

Thanks for your help, I still have the problem of altering the CPU and memory settings at the same time. If I change one to manual instead of auto, then change the settings myself, the other one goes back to Auto. So at the moment I can only control one or the other. Surely there is a solution to this

The BIOS is quirky indeed as mentioned it the review. I've not experenced that MB/BIOS but..
Here is a good post on your MB and there could be some very useful info. in there!

BTW...
If you got to search/advanced and highlight the AMD Motherboars section and tehn type in AN8 or AN8 Sli Delux you will fond lots of posts on them

They will only do that if you raise the memclock setting above 400 (DDR400). You can lower it to apply a divider and it will not set the CPU settings (jumperless menu) to AUTO. You can also make changes to the timings without that auto switching occuring. So, its just when you raise it above 400.

Only reason you would need to [raise it above 400] as far as I know is to test the max speed of the memory independent of the CPU speed. But, as The Duke mentioned:

You will only be able to increase the RAM by increasing the HTT. It will increase 1:1 so you can test its speed. Kinda a quirk with this board I guess that it doesnt give you free reign over the settings. I have seen posts saying that by applying the latest bios version you can unlock this, but at least as far as the Premium version is concerned, this doesnt seem to be the case.

Got that link figured out, anyways, make sure your bios is updated....your bios should be saving all settings.....save&exit bios..
There have been so many problems that have been solved with bios updates....
A lesson to all, if your having "strange" problems with OC'n, update your bios...please
