You won't be able to get true 5.1 out of 2 RCA(red\\white) cables. You will be only be able to get Dolby Pro Logic sound which basically just interprets what to send to the back speakers using a matrix decoding scheme. If you want true Dolby Digital 5.1 sound, you'll have to hook up the optical cord. If you're confused about the difference here is a link:

I don't know about 360, but the old xbox required the advanced AV pack to do this. I imagine the 360 would have an optical out on it.

my old xbox gets 5.1 and has the original AV kit

it is true that it is an interpreted signal
but Ive read alot about it

it is like a compressed signal, it can be played analog
but run through a digital circuit
it becomes the 5.1 or 6 or whatever channel
at least four
becuase center is just a mix of right and left played 3-5 decibels lower

Just to clarify, to get Dolby Digital 5.1:
Xbox 360 should be hooked up to your AMP with an optical cable. Do not run it through the TV, you can run the video straight to the TV if you want.

Yes, you can get 5.1 sound using Dolby Pro Logic II(analog). That is to say, you'll get sound out of all your speakers .But most games for Xbox 360 will have a separate digital track where all the channels are explictly programmed. That way you hear the sound it was made to be heard. Where as the Pro Logic track will only separate sound based on frequency, decibal level... So if something is behind you and to the left you might not hear it that way with the Pro Logic but you WILL hear it with Dolby Digital.
