How much better is this card and the 9700 Pro than a FX5700LE?

A 5700le is very overclocking friendly, as mine works now at almost double the stock frequency (the GPU). On stock speeds I think the best is the 9600pro, after the 5700le and the last the 6200. Anyway, the last two should be preety close.

FWIW, this is what I'm running and it overclocked nicely once I got it into a decent mobo. The only drawback is that it doesn't have a temperature sensor.
