One way to do it would be to move the contents of your "Documents" directory to a new directory on your data drive, then remove the original "Documents" directory from the OS drive and replace it with a symbolic link pointing to the new directory you just created on the data drive. As long as you name the symbolic link "Documents" or whatever the original directory name was, the change will be transparent and both Windows and your applications will continue to work as they did before without any additional changes, but now your data will be on the data drive and if you create new files in the "Documents" directory they will automatically be saved to the data drive with the other files you moved.
You can also mount a storage drive to a subdirectory on your OS drive, but doing so would inherently limit the drive's use to that one directory.
