Games need to be coded to support dualcore, if they aint, then they will only use 1 core. Some games has released patches that will give better performance for dualcores.
CoD2 got a patch, that is said to give better performance for ht/dualcore users.

Seems to me I just read somewhere (I think I was reading news about AMD's latest FX) that games will soon be using dual-core but not yet. I believe that it has to be written into the game when it's made.

Elderscrolls: Oblivion will support Dual Core CPUs. Comes out March 20th.

According to Gavin Carter (Kathode) in an interview with Evil Avatar, he reported that Oblivion will "definitely benefit from dual-processor systems." This would translate as well into benefitting from having a dual-core CPU, or even a CPU with support for Hyper-Threading Technology.
