Don't get suicidal here! I doubt the 7800s will be out of stock until the end of the summer, at least. It depends on how much stock the manufacturers have. Don't count on them being a good deal either, the 7900s are supposedly coming out at a lower price than the 7800s started with

The 7900GT is rumored to basicly just be a rebadged 7800GTX.

And they're produced with the 90nm process, which is cheaper and more efficient.
