I didn't know the 5970 was dual GPU :/

Either way wouldn't 2 5870s still outperform 1 5970?

I am not really an intel fan it is a bit too expensive for my tastes and what I intend to do

Good question, I was wondering that myself...

Though I suppose going AM3 now would provide the benefit of a drop-in upgrade when Bulldozer comes out (not confirmed though).

At the moment it's just personal preference IMO, both sides has ups and downs.

Yes they would.
As explained before, the 5970 is realistically a 5870X2 but with lower core and memory clocks. And as Cross-fire scales really well with the 5870, 2x 5870 > 5970. It just uses up more PCI-E slots and limits upgrade path.

What is the best memory to tag along with the Asus Crosshair IV and the 1090T? How much memory? 8gb? More? I also read you can only use dual channel with AMD processors?

I like Corsair Dominator series RAM so far as GSkill Support is awful.

Only the Ripjaws have been hit or miss...The PI Series has been solid. Also, G.Skill is coming out with AMD-specific memory called the Flare Series that will hit retail soon. Corsair might be tops in terms of compatibility, but their prices are awful. Too expensive for what you get.

By the way, you won't need 1000 watts, even for tri-fire 5870's. I guess it's nice to have, though...

The more expensive model has 2x 12V Rails. I'd go with that one.

AMD only supports dual channel. LGA1366 processors have triple channel.
LGA1156 is also dual channel.
I can't recommend much about RAM, I'm still learning about those too

Well if you have the money and don't want to do things to make SLI work, 2x 5970 for quad-fire.
If you like a bit less, 1x 5970 and 1x 5870 for Tri-Fire (best performance scaling with current drivers).
If you think they're both overkill, 2x 5870 for crossfire (best price/performance.)
If you think they're not enough overkill. 2x 4GB 5970 (ridiculously expensive and powerful).

Quad-fire scales really bad right now with the current drivers. I wouldn't recommend it.
