Just wanted to know what to set the striping block to, Optimal, 128k, 64k, etc ... what's best??

Stripe is best matched to the Cluster of the key partition and this is a ratio of 4:1 (stripe:cluster).

The default cluster is 4K so the stripe ideally will be 16K, esp if this is the boot partition and carrying the Virtual Mem file.

If the Array is for a non-OS partiton then look at the avergae file sizes to be stored and use a larger cluster and hence increase the Stripe size.
