Get the 5870.

Budget?

Change your case, Lian Li K56/58/60/62 are good, also CM HAF 922/932, CM 692 Advanced...

What is the main use for this computer? Is there a specific store you will be buying from?

That looks good! There are a few things I might change. If you're getting a gtx 480 you would want to get a bigger power supply, an 850w will do the job. If you want to sli that gtx 480 in the future think about getting a 1200w. If you going tri-sli (not very likely, but who knows) you should consider a 1500w or 1600w. For ram I would reccomend dominator from corsair, or some g.skill ram. I don't really know about that motherboard, maybe get an evga FTW3, evga 3x sli, or an ASUS P6X58D Premium.

I'm assuming your aussie, well your listing AUD so i'll assume so.

Firstly, link us the shop your buying from, and whether which shop your getting stuff from is flexible (like ordering online or from a local store ect.)

Secondly, list a very specific price for us to follow, that will help us get you the best bang for your buck system that will perform well while staying cool in australias heat (or cool, wherever you are from )

EDIT just noticed that your paying someone to assemble it, don't waste the money and learn the valuable skills of building your very own, personalised PC. It is lots of fun tinkering with all of the stuff, and i guarantee that you will enjoy it in the long run.

It's not very difficult. Have you got an old computer at home? Take it apart and put it back together for practice, just make sure you ground yourself And work on wood or tiles or other non conductive but clean surfaces.

If you already have a HAF 932, consider the 922, it's a mid tower version of the case.

Gskill is great RAM, is it Ripjaws, Trident, something else?

For the HDD, I strongly recommend the Samsung Spinpoint F3, it is about the same price as that Hitachi and is the fastest 7200 drive on the market right now

Get aftermarket cooling, it's important if you want to OC, and even more important here in Aus. For a cheap option, I'd recommend the Hyper 212+, however a Scythe Mugen II would serve you exceptionally well and it would be better for you to get that.

Other than that, it is an excellent build and I'm sure you will be very happy with it.

EDIT: Post 600!

definitely build it yourself, it is cheaper (as you'd said) and it isn't that hard, you just need to be careful and make sure everything is put together correctly. If you have any problems i promise that one of us will be here to help
