Simple. An 8-pin EATX power connector will be able to provide more power to the CPU usually when needed. This makes it easier to overclock while remaining stable. Theoretically, an 8-pin can support up to 280 Watts TDP on the processor because a 4-pin can support up to a 240 TDP.
