I think a lot of components draw off mutliple rails. Depends alot on CPU and Board I think... besides that I know USB devices are highly dependent on 5v. Also, CD-RW/DVD, HDD, Sound cards, and Graphics cards will draw off 12v and 5v... again it depends on the individual devices. Usually, if you look up specs on manufacturer websites, you can get a pretty good idea for what some components will draw from...
Of course, OCing will increase the draw on you PSU.
