It's the level in which the graphics card renders diagonal lines to make them look more straight, becasue computer generated images are composed of polygons which on an object can be fairly hard to render a perfectly straight line. AA corrects this matter by filling in the empty spaces that cause the "jaggies" hence why performance goes down because more calculations are involved when trying to make everything smooth

It's basically a trick to have graphics look less jagged.

Read this:
http://en.wikipedia.org/wiki/Anti-aliasing

or this:
http://www.widearea.co.uk/designer/anti.html

The extra work needed by your GPU results in lower performance, but in better looking graphics. If you already are struggling iwth your framerates, dont turn it on. If you're going smooth, it's worth to give it a shot.
