i was just in that situation 2 days ago...i had 3 evga sc 570s in sli..and they were new..
I had nothing but trouble!!!!...the first two cards would constantly stay around 70 - 73 c idel
and during game play hit 95-100 c....so i switched to 1 Msi tf III 580....ill get another in a couple of months,but if i were you,i would sell those 570s and get 2 580s.....but thats just me.....good luck..

lol...yup...i had to look it up online to find out why it wasnt o/ced...and they show up factory
set...but you have to flip the switch to activate the o/c settings...lololololol....

Asus 560Ti DirectCu II:

950/1900/4200 @ 1.037V (Survived Heaven, 2 Hours of Metro, and some TF2)

Wouldn't do 1000 even at +0.1v over 950 volts so I left it there, tried 975 but could only get it stable at 1.1v which wasn't worth the heat for 25mhz

Depends on your goals. If you're trying to run higher resolutions, get the 580's gb. If you just want more power than get the 570 as that will gain you more FPS.

When I had two GTX 570's, I was able to max out all of my games at 1920x1200 resolution and still maintain around 60 fps (if not higher). This included the heavy hitters like Crysis, Metro 2033, and GTA4.

As num1son mentioned, if you're going to be going for a higher resolution (ie. Surround), then the GTX 580's with 3GB will provide the extra oomph to run that. If you're keeping the same monitor, you'd be hard pressed to find much more of a performance difference with a third 570, let alone switching to 580's, in which case, you may as well stick with what you have (unless you are into benchmarking or folding).
