To be honest I never even bothered to touch mine. I left mine on AUTO and my motherboard chose to make it run at 1.12V with my Tri-SLI setup. I remember with just Two-Way SLI (with both my 570's and 580's) it defaulted to the stock 1.10V. In all situations, everything was rock solid and any failures or instability was the result of something else.
You could try setting your's to AUTO as well to see if that stabilizes your setup.
I'd be more inclined to believe that the new drivers have some issues though, especially with the faster 2D/3D voltage switching. I'd suggest following this guide to the "t" to do a good cleansing and reinstall the 285.26 beta drivers:
