Goto Settings and tick on Unlock Voltage control. Done deal Just don't over 1.1v and you should be fine.

Thats when people disable OCP and unlock it over 1.1. I've yet to have mines burn and I run stress testers for hours a day at max/high voltage without flashing the bios for higher than 1.1v of course.
If your conservative with your overclocking and keep the voltage down it won't matter how much you overclock the core because it will never be enough to burn the card.

It would be worth your time to swap your PSU with another for a test. PSU could do it, I recently had to switch mine after unexplained crashes which went away with the new power supply. It is always a possibility, no matter what brand or wattage you have, they can be faulty and behave badly under load.

I know not idling to 2D and multiple monitors have been mentioned before in the thread, but this is slightly different.

I'm running 2 570's in sli, both monitors going into same card, 2 different resolution monitors (2560x1600 and 1920x1200). Gaming on the 30inch of course, everything else on the other.

Sometimes when I tab out of a game, lets say WoW since it is Windowed-Full Screen, my clocks idle down slightly to maybe 60% usage, and stay there. Even when I return to game, the clocks still stay bogged down. This results in a 50-75% FPS drop that I can not get back up unless I exit the game completely and re-enter.

Basically, the cards seem to be getting stuck in 2D when I alt-tab and sometimes don't recover until the game is restarted.

Any ideas? I'd offer a screenshot but it would be hard to tell which monitor is in focus without using a ridiculous resolution image.

I'm sure your PSU is fine or else it would shut down rather than BSOD.

Yes driver wiping is important. When I got my 570 I didn't drive wipe (had an AMD card before that) and had crashes all over the place as a result. Drive wipe and wupti everything smooth.
