Try disabling your display group and benching with a single monitor (I know it can be a pita but you should have the option to re-enable your group later so long as you don't uninstall/reinstall drivers). I had the same problem with eyefinity. It's as if benchmarks appear windowed to the system at extreme resolutions and crossfire won't kick in.
Although I have to admit... I removed one of my cards that was starting to die... artifacting and bsod's... so I'm not sure if it was just a flaky card the whole time or something else.
I thought I read somewhere that you had to rma one of your new cards so I assume you've tested them all individually.
