I have a inno3d GTX 480 and 2x Gainward GTX 460 1GB GS folding. My power meter monitors the whole house and is reporting less than 700watts.

You should be fine, let's just say as a rough guess.

OC i7 (160W) + GTX580 (250W) + GTX460 (160W) - 570W

That leaves 170W for hard drives and fans, overclocking both cards might push it though.
