overclocking a dual cpu setup

Hi guys -

From what I've been reading, overclocking a dual CPU setup is difficult as most of the boards that have 2 sockets don't offer much in the way of overclocking.

Are there any boards out there right now that are known to be a decent overclock for 2 CPUs? I'm looking for 2 quad cores either AMD or Intel - whichever I can find a decent board for. I'm assuming I'll be going with a server board and either opteron or xeon. There were a couple of desktop boards that I read about (asus Z8NA-D6 for example) - but the reviews weren't stellar. If overclocking isn't an option - any recommendations on a stock setup? I'd like to keep it under $1500 for the two CPUs and board.

Is there a reason why you'd rather go dual CPU than single CPU?

It is going to host a virtual environment so I'd like to have as many cores as is reasonable. I just enjoy performance tweaking so overclocking and some nice cooling if possible is something I'd be interested in...
