This would be my recommendation as well since, I too, have had a lot of issues with various games not working right with one set of drivers but being fine on a different set, only to break a different game entirely. It pissed me off enough to just get a GTX 570 and I've been happy ever since.

Right now, Nvidia cards will only support Surround with two or more GPU's. Since you've already sunk $1000 in GPU's already, an exchange to a couple of GTX 580's will roughly even out in price anyway.
For whatever reason, AMD drivers just aren't there yet for 5970's. It's true that there may be a lot of people that have no problems with the cards, but for people like you and I, it's hit or miss, which in this case is a big miss. Your only other option would be to wait until AMD releases the proper drivers that are rumored to be be released "soon", which promise to offer the superior Crossfire scaling performance that the 6800 and 6900 series of cards have. I don't know about you, but I got sick of waiting around for drivers to fix a product that has been on the market for well over a year.
