Gaming, I pause my clients. Any regular day to day use though, just web browsing, its fine to leave them running.

I leave it running no matter what, even when I game, and I haven't noticed any difference with or without it on.
The client automatically scales back CPU usage and only uses your idle CPU power, so if you're doing something CPU intensive, the folding client will scale back its use.

Although I do usually turn it off when I'm encoding video, because the client itself will still use some CPU power, no matter how minimal.

Things like surfing the web and listening to music shouldn't effect (affect?) your PPD much. When playing games, the PPD will drop down quite a bit, and your game may lag. I typically will pause the gpu client while gaming. However, the cpu client will typically put most of its resources into the game, so you don't really need to worry about that.

edit:

encoding video can be pretty demanding, and is more cpu based, so a similar situation to gaming will happen.

photoshop will be more like typical day to day things, so you should be fine.

Turn off the GPU client if you're planning on doing something that uses the GPU.

But if the program is CPU intensive, the SMP client throttles pretty well, so you shouldn't notice any performance loss.
