FSX without a doubt is the most demanding "game" I have come across;

Full traffic
London (Or any major city) Add-on scenery

@ OP crysis
I actually can't max it out
with AA as high as I can go i have to drop my resolution
with aa at 4x i can run it at my native resolution

It's crazy...Try running it on a dual core if you think I'm kidding. I did it with a Athlon 64 x2 3600+ and a 9400GT/all low @ 1024x768 and still lagged. It stuttered a bit with my current setup at 1440x900 on my TV. I had it on Medium/High with a far view distance, though.

Metro 2033 1# for all the wrong reason. To me it looks like a DX9 console port where they have strapped on some DX10,11 features. I feel Metro has a poorly coded engine, no doubt as it was written with the Xbox360 in mind.

Crysis to me is by far still the most advanced engine and "graphically demanding", due to being a sandbox with insane view distances. A destructible shack can be destroyed 2KM away inside the game. Unlike most games where the background is just that, in Crysis almost everything you see is intractable. The Cryisis engine is not badly written as many in the past believe its just requires huge amounts of grunt and 3 or 4 years before its time.

Not looking forward to Crysis 2, can tell its badly nerfed for console.

yea i got that game. but i think the bottleneck is mostly on CPU though not GPU.

in term of demanding games, metro 2033 should be #1. but it doesn't look that great imo.
crysis looks better and should strain your system just like metro.
