Please critique my proposed SB build

I plan on building a new system soon. I'm coming from an iMac C2D and want to go back to a home built. One thing I really like about the iMac is how quiet it is. I have my PC in my living room so I like the silence, but I want more horsepower and upgradeability. I also want to build a system that is capable of 3D gaming and 3D movies. The main games I will be playing are iRacing, WoW and rFactor as well as other games here and there. Here is how I've got it planned out so far:

Case: Silverstone Fortress FT02B. I haven't decided on whether to get the windowed version or not. One goal is to keep noise to a minimum and I'm not sure how much the window will impact noise.

CPU: i7-2600k

CPU Cooling: Thermalright Ultra-120 eXtreme Rev.C. Alternatives would be Noctua NH-D14 or Prolimatech Megahalems which also scored very well at silentpcreview. Price isn't really a factor here, just looking for best silent performance.

Motherboard: Gigabyte GA-P67A-UD7 or Asus Maximum IV

Graphics Card: GTX 580 (single to start, will go to SLI if I need more power for 3D).

Looking great! This is similar to what I'm going to build when SB comes out, except I'm going to use a HD6950 because I'm doing eyefinity =D

2600k is mainstream sb cpu. performance sb will be ivy bridge later this year. you can buy beefy psu now and upgrade ivy bridge performance cpu and sli gpu's later.

corsair h70 water cooler might be better
