I would suggest get the 2000 and tighten the timings down to 1866. If u have not bought your board yet, i'd seriously review the ud5 vs the ud7. If you don't need the NF200 chip that savings could then get applied to your better RAM.
What I have in hand in this precise moment is a UD5 (because fortunately I made up my mind soon enough
) and Ripjaws 8Gb 1333. Why 1333? because I saw these reviews that said SB only supports a 1.5v - 1333Mhz RAM (I didn't wait for the "official" RAM support announcement or the new designs to came out, and unfortunately I haven't seen your discussions).
Now obviously I saw the new RAMs designed for SB, and freaked out. But
in the same time I saw those SB RAM have high latencies, except the 1333 ones (Ripjaws X 8Gb). Now I am in a dilemma.. Sell the RAM I just bought to buy 2000+? 1333 with better latencies? Or simply keep them.
