I think what he mean't was that more RAM sticks on the slots, the more stress it puts on the NB.

Which can limit a overclock on the CPU.

Now to the OP,

Gaming: No, you won't see much difference.
Photoshop, editing, etc.: Yes.

OP, you should put that money to a new GPU. You'll see much more of a difference in gaming.

My cpu is still running at stock. When I oc wwold two stick make it better or for stick of the same mem which wold make it 8 Gig of memory.Wold it make the sys run hotter or harder to stabilize?

I'm running 4 sticks just fine, and I've overclocked the snot out of my entire system . I wouldn't suggest you get 8GB of RAM though unless you absolutely NEED it.

With 4 sticks of DDR2 will not hurt your ocing. With 4 sticks of DDR3 anything over 1333 you will.
