Windows Backup and Restore? How functional?

Has anyone used this? I currently have my OS and games spread out over several 300GB Velociraptors. I see no point in keeping them, and would like to move to just one primary HDD for the time being and sell off the rest.

Can I use Windows Backup to create a system image on another HDD, break up the RAID volume, install Windows 7 on one of the Velociraptors, then access that other HDD (that was never a part of the RAID) and restore to my exact setup right now?

I personally think the Window back up is confusing and not very helpful unless your planing on backing up your whole HDD and OS. Doesnt do much other than back up your whole OS and HDD

Well I plan to do just that...back up the entire OS so that I can get it from a RAID0 array to a standard 1 drive set up...sounds like I could be in luck?
