Having multi-monitor setup eat more FPS from GFX?

New to the whole multi monitor setup, when You have the monitors in your possession, is it wiser to always use dual graphics card i.e. plugging into each card separately via each monitor?

Or can you plug into the one graphics card with each monitor?

The FPS are going to lower because it now has to work twice as hard for each monitor correct?

It depends on the resolutions of the monitors either combined or separately.

Two graphics cards will "almost always" scale better then a single one.
