I have a complete computer from upgrading my sig rig, and I plan on using it to F@h, ripe dvds, and encode videos. However I am not sure what the best OS to do this is.

I am just wondering why win7, and not like a lightweight Linux?

Idk why people ask these questions. If it hadn't been for vista, no one would ever have to ask these questions. Windows 7 no contest.

Linux is hard to get to grips with if you are a first time user, and there are probably a lot more options for what you want to do on Windows.

I doubt it'd yield any significant performance increase anyhow, if anything, a slight decrease.

Plus from what I thought, folding on linux isn't preferred if you're looking for fold GPU's?
