What is the best sandy bridge process coming out? is it the i7 2600k?

Yes, it is the absolute best.

But for gaming only, the 2500K will suffice.

Sorry for my noobness but if the 2600K is better than the 2500K why is the 2500K the better option for games?

the 2500k is 100$ or more cheaper than the 2600k. All you're mainly getting w/ a 2600k over a 2500k is hyperthreading. Most games don't even utilize 4 cores as it is so you don't honestly need a 4 core 8 thread processor such as the 2600k to get the most out of your games.

It's not "better" in the sense that games will perform better with it.

They're just saying that it might be better for you based on price/performance. Really depends on if you want hyper-threading or not.
