Concentrated solar power plants are used to make electricity, but you can also get additional benefits by desalinating water. I think there were plans to build them in the sahara and provide electricity for the whole Europe, dunno if these plans still exist.
While the main product is electricity, fresh water is also quite valuable. You could start a plantation of big fruit tree that would grow well in the desert. From these trees, you get evaporation which will form clouds. Then from these clouds you get rain that can be used to grow more trees, etc.
Forests like the amazon don't get enough water from the oceans to sustain all of itself, but recycle the water after it falls by the respiration/transpiration/evaporation of the forest itself.
So if you start to plant a small forest in the sahara and feed it with water, you might start a chain reaction that will cause the revegetalization of the whole sahara. If we could achieve that, that would be beyond awesome.
