Accoring to this artical it doesn't matter if your PSU has, say, 1000W, your system only draws out what is needed and there is no such thing as 'too much'. I am sure I have read otherwise somewhere.. I'm really confused now, i've been out of the PSU loop for so long now.

Yes of course; you are right. If your computer has a HD4350 and a Sempron, but you have a 1kW power supply, it's not going to draw 1000W; It might draw 150W.

The reason for not recommending people to get high wattage PSUs is to save them money, and to not be wasteful.

I don't know what you plan to do with your computer in the future, but generally speaking, 90% of computer "enthusiasts" can run their system on 500W or less. PSUs are very ominous objects. Not too many people really understand them, which leads to a whole lot of misconceptions and tons of wrong information.

So, essentially what I am getting at is. The likelihood of anyone ever needing 1000W+ is extremely unlikely. You can run a Phenom II and a HD6870 off a decent 450W.

Those PSUs calculators? Garbage. They'll recommend hundreds of watts too much. There's nothing wrong with using a high wattage supply; It's just that its 99% of the time, useless, and a waste of money.

Actually, there is such a thing as overkill. It can negatively effect the efficiency and it can also even negatively effect system stability.
