Hmm, as per SkippyDogg's post, the BIOS update has had no effect.

I'll see what Sapphire has to say about it - I'm still hoping they can give me an offical 850/1200 BIOS cos I really don't want to RMA my card for an entire month!

Sapphire has got back to me with another BIOS - this time it looks like they've upped the voltages across the board.

Card seems more stable in OCCT - however there were a couple of flickers or corruption - nothing that crashed my machine though.

Support from Sapphire seems pretty good!

Well, the new BIOS was a bit of a waste of time. I've flashed my card with a 5870 Vapor-X non-OC BIOS, it's dropped the core and memory speeds to what I've found to be stable for my card.

Feel a little bit p*ssed that the card I was sold isn't stable at stock speeds, but I'd rather it run more slowly than go through the hassle of RMAing it for weeks on end.
