You probably can at least manage 1600 CAS9 but not further. As with all 1333 CAS9 RAM, it may hold back other overclocks such as the CPU.
They do have this Corsair XMS3 1600 C9 kit for $100 after promo if you wish to get better memory... though I'm doubtful as to how much better this kit would be compared to the G.Skill here.

Which is more important, CAS Latency or Speed? For instance I have a 2500K.

It is all about speed.In the end that will give you the best scores in benching and will be fastest for everyday use.Get the fastest stuff you can.My ram at 2200mhz.and cas 9 is faster than any other configuration,even 8-9-8 2000.

At the end of the day you'll have spent an extra $40 on an extra 3% performance for a part that will be worth nothing in three years anyway if you get RAM clocked beyond 1600MHz.

I agree with test tube, but consensus right now (until bulldozer comes out) seems to be you want tight timings on AMD and high speeds on Intel processors. That's for now and there are exceptions.
