So for my new rig im planning to get 1 120GB Intel X25-M SSD to dualboot Ubuntu, & Windows 7. I want also am planning to get 2 500GB Samsung Spinpoint F3's for the RAID 0 setup. Im extremely confused on what to do. This is my first RAID setup I plan to have. Btw this will all be on ASUS P8P67 Deluxe so hopefully there wont be any compatability issues there

Why don't you consider VMware?
Also, please note that using OSX on a non-Apple system is a violation of the EULA and will likely have your topic locked.

The configuration should be fairly straightforward, put your SATA controller into RAID mode and add the spinpoints to a 'striped' array. Also note in a multi-boot environment, you want to install Windows first.

Ooops errrm my bad. I dont want to use VMware because from what i understand there is no hardware acceleration for anything & the idea of booting it up is nice aswell. So all i do is set it up in the mobo & assigne lets say...128kb to the striped array? The reason i ask is because from what I understand if u use such a combo u lose TRIM support on the SSD. Also isnt there something u have to configure from teh OS itself?
