Help with my upgrade plan

I'm in the process of upgrading my rig (see sig) and I really need suggestions with my upgrade route.
I already got the i5-2500K and the Asus P8P67 mobo so I just need to get the memory and a SSD to complete the setup.
Regarding the memory, I've read a lot but still don't know what kind of memory should I get for my Sandy Bridge build. I wanna get 8GB and I don't know if 1600Mhz with CAS 9 memory should be enough for me or should I go higher with lower timing? My goal is to OC the CPU to about 4.5Ghz and run it 24/7.
My original plan was to use most of my old parts but since I also wanna upgrade my 24" to a 30" for dual 30", I'm sure a single GTX 480 won't cut it for me when I game so I'm thinking of upgrading my PSU as well. Is the AX850 sufficient enough for GTX 480 SLI? I'm not gonna OC the GPU, just CPU only and I think it's better to get another GTX 480 for cheap rather than getting 2xGTX 580, which is out of my budget for now.
And any other suggestions whether I should get a new case?

I would go with something like this for ram just for the tighter timings.

Your PSU should be fine for one card and a decent OC, if you do decide to go with the SLI then I would go up to a 750w.

That's what I'm trying to figure it out as some say I can get a way with cheaper RAM and there won't be any difference between CAS 7 and 9 so I'm totally confused.
As for the PSU I know I'm fine with one card for now but if I wanna add another GTX 480 then is the AX850 enough?
