No it will not stretch it.

You can set in the nvidia control panel-> display -> adjust desktop size -> do not scale or use nvidia scaling. both works. Try it.

Just make sure your center monitor is the one connected to the first, if I'm not mistaken to the top connection, else you will play full screen on one of the side monitors. not very fun

I myself play some games at 1920X1200 even tho my desktop is set to 6000X1200.
No need to change anything.
