With one 4850 (438 watts) with 2 (521 watts)
The reason I though I was fine is because I have my computer on a watt meter. The meter has this plugged into it.

Even when playing Crysis on my sig comptuer the watt meter only shows 500 watts. At least 200 I think is from all the other stuff.
Edit: Also side reference... I did have one BSOD when playing Crysis. Related to ATI. It was the only one I've had since upgrading the computer months ago.
